迷迭香烤母處理法是一種香料微生物發酵處理嘅一種
再發酵過程中加入特殊培養嘅微生物協助新城風味
這些天然嘅材會放在密封的容器內並控制好酸鹼值來培養八至十天
培養菌種嘅同時,全熟的櫻桃用什麼五至20度嘅凍水洗乾淨污漬有害菌又過濾浮果並去除果肉,
在發酵池中發酵48小時。
再把兩者方樽蜜蜂統中進行180小時嘅厭氧發酵處理
發酵完的咖啡生豆再用水清洗乾淨已知溫室進行約20天嘅風乾,
令生豆含水率降至11.5%
